Purple Sweet Potato & Smoked Salmon Brunch

Introduction

Today, I’m excited to share a unique dish that is perfect for a cozy weekend brunch with friends or family. This recipe is a result of my love for experimenting with flavors and ingredients to create something truly special and unexpected.

Ingredients

– 250g purple sweet potatoes
– 150g smoked salmon
– 100g goat cheese
– 2 tbsp honey
– 1 tbsp balsamic vinegar
– 1 tsp dried lavender
– Salt and pepper to taste

Preparation

Start by preheating your oven to 200°C. Peel and chop the purple sweet potatoes into small cubes and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for 25-30 minutes until tender.

While the sweet potatoes are roasting, heat a frying pan over medium heat. Add the smoked salmon and cook until slightly crispy on the edges. Remove from the pan and set aside.

In a small bowl, mix the goat cheese with honey, balsamic vinegar, and dried lavender until well combined.

Once the sweet potatoes are cooked, remove them from the oven and mash them using a potato masher until smooth. Season with salt and pepper to taste.

**Assembly:**
To assemble the dish, spread a layer of the mashed purple sweet potatoes on a serving plate. Top with the cooked smoked salmon and dollops of the honey and goat cheese mixture.

Tips

For an extra flavor boost, try adding a sprinkle of crispy fried shallots on top of the dish before serving. The crunchiness and savory flavor will take this dish to the next level.
