Ingredients:

  • 2 medium-sized beetroots, peeled and diced
  • 100g goat cheese, crumbled
  • 50g walnuts, roughly chopped
  • 2 cups arugula
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • To taste

In a small bowl, whisk together the balsamic vinegar, honey, and a pinch of salt and pepper to make the dressing. In a large salad bowl, combine the roasted beetroots, arugula, crumbled goat cheese, and chopped walnuts. Drizzle the dressing over the salad and gently toss to coat all the ingredients.
