  • 2 medium-sized beetroots, peeled and diced
  • 100g goat cheese, crumbled
  • 50g walnuts, roughly chopped
  • 2 cups arugula
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • To taste
