For this recipe, you will need the following ingredients:

  • 400g chicken breasts (boneless, skinless)
  • 2 lemons
  • 3 sprigs of fresh rosemary
  • 50g honey
  • 30ml olive oil
  • 20ml balsamic vinegar
  • 2 cloves of garlic

To prepare this dish, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • zester
  • mixing bowl
  • whisk
  • measuring cups
  • measuring spoons

Start by preheating your oven to 375°F (190°C). Place the chicken breasts in a baking dish and season them with salt and black pepper. In a mixing bowl, combine the juice of one lemon, honey, olive oil, balsamic vinegar, minced garlic, and chopped rosemary. Whisk the marinade until well combined.

Pour the marinade over the chicken breasts, making sure they are evenly coated. Slice the second lemon into thin rounds and place them on top of the chicken. This will help infuse the dish with even more citrus flavor as it bakes.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through. For the last 5 minutes of cooking, remove the foil to allow the lemon slices to caramelize slightly.

Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Serve the Lemon Rosemary Chicken hot, garnished with additional fresh rosemary leaves for an extra burst of flavor.
