  • quinoa (150g)
  • orange segments (100g)
  • grapefruit segments (100g)
  • avocado, diced (1 medium)
  • red onion, thinly sliced (50g)
  • fresh mint leaves, chopped (15g)
  • olive oil (30ml)
  • fresh lemon juice (15ml)
  • salt and pepper to taste

To start, rinse the quinoa under cold water to remove any bitterness. In a saucepan, combine the quinoa with 300ml of water and bring to a boil. Reduce heat to a simmer, cover, and cook for 15 minutes until the quinoa is tender and the water is absorbed.
