  • jicama (200g, peeled and diced)
  • kiwano melon (100g, seeds removed and diced)
  • pomegranate arils (50g)
  • fennel bulb (1/2, thinly sliced)
  • lime juice (2 tbsp)
  • honey (1 tbsp)
  • extra virgin olive oil (2 tbsp)
  • fresh mint (a handful, chopped)
  • salt (to taste)
  • black pepper (to taste)

Preparation

Start by preparing all your ingredients – peel and dice the jicama, kiwano melon, and fennel. Remove the pomegranate arils from the fruit. In a mixing bowl, whisk together the lime juice, honey, and extra virgin olive oil to create the dressing. Season with salt and black pepper to taste.
