With the warm weather approaching, I wanted to create a dish that is light, refreshing, and perfect for a sunny day picnic or a backyard barbecue.

Ingredients:

  • mixed baby greens (100g)
  • pomegranate arils (50g)
  • cantaloupe, cubed (150g)
  • kiwi, sliced (50g)
  • microgreens (20g)
  • pink grapefruit, segmented (100g)
  • pistachios, chopped (30g)

Kitchen Tools:

  • knife
  • cutting board
  • mixing bowl
  • citrus juicer
  • salad tongs

Preparation:

Start by washing and drying the mixed baby greens and microgreens. In a large mixing bowl, combine the greens, pomegranate arils, cubed cantaloupe, sliced kiwi, pink grapefruit segments, and chopped pistachios.

For the dressing, squeeze the juice from the leftover grapefruit membranes using a citrus juicer. Drizzle the juice over the salad and gently toss everything together with salad tongs until well combined.

Assembly:

Once the salad is mixed, divide it into individual serving bowls or place it on a large platter for sharing. Garnish the salad with extra pomegranate arils, microgreens, and a sprinkle of crushed pistachios for an added crunch.

Tips:
