Today’s Unique Vegetarian Recipe: Spicy Pumpkin Curry

As the weather starts to cool down and fall approaches, I find myself craving warm, comforting dishes that are full of flavor. That’s why I’m excited to share my recipe for Spicy Pumpkin Curry with you today. This dish combines the sweetness of pumpkin with spicy, aromatic flavors to create a truly unique and satisfying meal.

Ingredients:

  • 300g pumpkin, diced
  • 200ml coconut milk
  • 150g cooked chickpeas
  • 2 tbsp red curry paste
  • 1 tbsp minced ginger
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 200ml vegetable broth
  • 1 lime, juiced
  • Fresh cilantro, chopped

To start, heat a large pot over medium heat and add the red curry paste. Cook for 1-2 minutes until fragrant, then add the minced ginger, garlic, and chopped onion. Sauté until the onions are translucent.

Next, add the diced pumpkin, sliced bell pepper, and cooked chickpeas to the pot. Stir to combine all the ingredients and coat them in the curry paste mixture. Pour in the coconut milk and vegetable broth, stirring well to mix everything together.

Reduce the heat to low and let the curry simmer for about 20-25 minutes, or until the pumpkin is tender. Once the pumpkin is cooked through, squeeze the lime juice into the pot and give it a final stir. Taste and adjust the seasoning, adding salt and pepper if needed.

Serve the Spicy Pumpkin Curry hot, garnished with fresh cilantro. This dish pairs perfectly with steamed rice or naan bread for a complete and satisfying meal.
