Introducing Maple Glazed Duck Breast with Pistachio-Cranberry Quinoa

Today, I am excited to share a recipe that combines the richness of duck breast with the sweetness of maple and the crunch of pistachios. This dish is perfect for a cozy dinner with loved ones or a special occasion where you want to impress your guests with a unique and flavorful meal.

Ingredients:

  • 2 duck breasts (about 400g each)
  • 1/4 cup maple syrup
  • 1 cup quinoa
  • 1/2 cup shelled pistachios
  • 1/4 cup dried cranberries
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil

To start, score the skin of the duck breasts and season them with salt and pepper. In a hot frying pan, cook the duck breasts skin-side down for about 6-8 minutes until the skin is crispy. Flip the breasts and cook for another 3-4 minutes. Remove from the pan and let them rest.

In a saucepan, combine the maple syrup and a splash of water. Simmer until slightly thickened, then brush the mixture over the cooked duck breasts. This will create a beautiful, sweet glaze on the duck.

Meanwhile, rinse the quinoa under cold water. In a saucepan, bring the chicken broth to a boil and add the quinoa. Reduce heat, cover, and simmer for about 15 minutes until the quinoa is cooked and fluffy.

Toast the pistachios in a dry pan until fragrant, then chop them roughly. Stir the pistachios and dried cranberries into the cooked quinoa, along with a drizzle of olive oil.

To serve, thinly slice the duck breasts and arrange them on top of the pistachio-cranberry quinoa. Drizzle any remaining maple glaze over the duck for a final touch of sweetness.

The total weight of the cooked dish is approximately 1200 grams, with 4 servings at 300 grams each. One serving is approximately 450 calories.

One clever tip for this recipe is to save any leftover maple glaze to drizzle over roasted vegetables or grilled chicken for extra flavor.
