Today’s Delightful Creation: Cinnamon-Spiced Pumpkin Risotto

As the leaves change color and the air turns crisp, I find myself craving warm and comforting dishes. Today, I am excited to share with you my latest culinary creation: Cinnamon-Spiced Pumpkin Risotto. This dish is a perfect blend of creamy, savory, and slightly sweet flavors that will surely warm your soul on a chilly autumn evening.

Ingredients:

  • Arborio rice (200g)
  • Pumpkin puree (300g)
  • Vegetable broth (1 liter)
  • Onion (1, finely chopped)
  • Garlic (2 cloves, minced)
  • Cinnamon (1 tsp)
  • Nutmeg (1/2 tsp)
  • Parmesan cheese (50g, grated)
  • Butter (2 tbsp)
  • Salt and pepper to taste

To start, heat the vegetable broth in a saucepan over low heat. In another saucepan, melt the butter and sauté the chopped onion and minced garlic until they are soft and translucent. Add the Arborio rice to the saucepan and cook for a few minutes until the rice is lightly toasted.

Next, stir in the pumpkin puree, cinnamon, and nutmeg, coating the rice evenly in the flavors. Begin adding the warm vegetable broth, one ladleful at a time, stirring continuously until the liquid is absorbed before adding more. This process will take about 20-25 minutes, so be patient and enjoy the aromas that fill your kitchen.

Once the rice is creamy and cooked to al dente, remove the saucepan from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste, adjusting the spices if desired.
