On a floured surface, roll the sweet potato dough into ropes, then cut them into bite-sized pieces to form the gnocchi. Using a fork, create ridges on the gnocchi to help hold the sauce later on. In a skillet, melt the butter until it turns a nutty brown color, then add the gnocchi in a single layer to brown on each side.

Once the gnocchi is golden and crispy, sprinkle on the grated parmesan cheese and toss gently to coat. Serve the sweet potato and sage gnocchi with a drizzle of the brown butter sauce and extra parmesan on top for a decadent finish.
