Preparation Process

I start by dicing the sushi-grade salmon, ripe avocado, and fresh mozzarella into small cubes. In a mixing bowl, I combine the diced ingredients with cooked quinoa, soy sauce, sesame oil, and the juice of one lime. I mix everything together gently to ensure all the flavors are well combined.

Next, I dice a ripe mango into small pieces and finely chop a red chili. I mix the mango and chili with some freshly chopped cilantro in a separate bowl. This will be our sweet and spicy topping for the dish.

In a hot frying pan, I quickly sear the salmon-avocado quinoa mixture until the salmon is just cooked through. I then plate the mixture and top it with the mango-chili-cilantro salsa.
