Today, I’m excited to share a unique and delicious recipe that I recently discovered while experimenting in the kitchen. This dish is perfect for any time you’re in the mood for a flavor-packed meal that will surprise your taste buds.

For this recipe, you’ll need the following ingredients:
– 400g boneless chicken thighs
– 1 large eggplant, diced
– 1 can of coconut milk
– 2 tablespoons of red curry paste
– 1 tablespoon of fish sauce
– 1 tablespoon of brown sugar
– Fresh basil leaves
– Salt and pepper to taste

Make sure you have the following kitchen tools on hand:

  • chef’s knife
  • cutting board
  • skillet
  • wooden spoon

Start by seasoning the chicken thighs with salt and pepper, then sear them in a hot skillet until browned on both sides. Remove the chicken from the skillet and set it aside.

In the same skillet, add the diced eggplant and sauté until it begins to soften. Return the chicken to the skillet and add the red curry paste, coconut milk, fish sauce, and brown sugar. Stir everything together and let it simmer for about 15-20 minutes until the chicken is cooked through and the flavors have melded together.
