Today, I’m excited to share a recipe that captures the essence of fall in a single dish. As the leaves start to change color and the air becomes crisp, this savory pecan-stuffed squash is the perfect way to celebrate the season. The combination of hearty squash, earthy pecans, and warm spices will fill your kitchen with the aroma of autumn.

Ingredients:

  • 2 acorn squash (800g)
  • 1 cup pecans, chopped (120g)
  • 1 onion, finely chopped (150g)
  • 2 stalks of celery, diced (100g)
  • 1/2 cup dried cranberries (80g)
  • 2 cloves of garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil

To start, preheat your oven to 375°F (190°C). Slice the acorn squash in half and scoop out the seeds. Place the squash halves cut-side down on a baking sheet lined with parchment paper. Bake for 30-40 minutes, until the squash is tender.

While the squash is baking, heat olive oil in a skillet over medium heat. Add the onion, celery, garlic, pecans, dried cranberries, thyme, cinnamon, nutmeg, salt, and pepper. Cook until the vegetables are soft and the mixture is fragrant.

Remove the squash from the oven and carefully flip them over. Fill each squash half with the pecan stuffing mixture, dividing it evenly among the squash. Return the squash to the oven and bake for an additional 15-20 minutes, until the stuffing is heated through.

Once the squash is done, allow it to cool slightly before serving. The combination of sweet squash, crunchy pecans, and tangy cranberries makes for a truly satisfying dish that is perfect for a cozy fall evening.
