As the weather starts to cool down and the leaves begin to change, I find myself craving comforting meals that remind me of cozy autumn nights. Today, I’m excited to share with you my latest creation: Autumn Apple and Sage Stuffed Pork Tenderloin. This recipe combines the savory flavors of sage and pork with the sweetness of apples to create a dish that is both elegant and comforting.

To make this dish, you will need the following ingredients:

  • 1 pork tenderloin (about 500g)
  • 2 apples, peeled and diced
  • 100g breadcrumbs
  • a handful of fresh sage leaves, chopped
  • 2 cloves of garlic, minced
  • 50g butter
  • 2 tbsp olive oil
  • salt and pepper to taste

You will also need the following kitchen tools:

  • chef’s knife
  • cutting board
  • saute pan
  • roasting pan
  • meat thermometer

Start by preheating your oven to 375°F (190°C). In a saute pan, melt the butter over medium heat. Add the diced apples, garlic, and sage, and cook until the apples are soft and caramelized. Remove from heat and stir in the breadcrumbs until well combined.

Using a sharp knife, butterfly the pork tenderloin by slicing it lengthwise but not all the way through. Flatten the tenderloin with a meat mallet to an even thickness. Season the inside with salt and pepper, then spread the apple stuffing evenly over the surface. Roll the tenderloin back up and secure with kitchen twine.

In the same saute pan, heat the olive oil over medium-high heat. Sear the stuffed pork tenderloin on all sides until golden brown. Transfer to a roasting pan and roast in the oven for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C) using a meat thermometer.

Once cooked, let the pork rest for a few minutes before slicing. Serve the stuffed pork tenderloin sliced into rounds, drizzled with any remaining pan juices.
