Savor Summer with this Sweet and Tangy Peach Gazpacho

Introducing: Summer Peach Gazpacho

Today, I’m excited to share with you a refreshing and unique dish perfect for the hot summer days: my Summer Peach Gazpacho. This recipe combines the sweetness of ripe peaches with the tangy flavors of traditional gazpacho for a delightful twist on a classic dish.

Ingredients:

  • 3 large peaches
  • 1/2 cucumber
  • 1 red bell pepper
  • 1/4 red onion
  • 1 large tomato
  • 2 garlic cloves
  • 3 tbsp white wine vinegar
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • blender
  • knife
  • cutting board
  • mixing bowl

To start, roughly chop the peaches, cucumber, bell pepper, red onion, tomato, and garlic cloves. In a blender, combine all the chopped ingredients along with the white wine vinegar and olive oil. Blend until smooth, then season with salt and pepper to taste.

Once the gazpacho is well-blended and seasoned, transfer it to a mixing bowl and refrigerate for at least an hour to allow the flavors to meld together. When ready to serve, give the gazpacho a good stir and taste, adjusting the seasoning if needed.

This Summer Peach Gazpacho weighs approximately 1200 grams in total and serves 4 people. Each serving weighs around 300 grams and has an estimated calorie count of 120.
