Summer Delight: Refreshing Watermelon Gazpacho

Today, I’m excited to share with you a unique and refreshing summer dish that is perfect for those hot days when you want something light and hydrating. This watermelon gazpacho is a twist on the classic Spanish chilled soup, using sweet and juicy watermelon as the star ingredient.

For this recipe, you’ll need the following ingredients:

  • 1 medium watermelon (about 1200g), seeded and cubed
  • 1 English cucumber (about 250g), peeled and chopped
  • 1 small red onion (about 100g), diced
  • 1 red bell pepper (about 150g), seeded and chopped
  • 2 large tomatoes (about 300g), chopped
  • 2 cloves of garlic, minced
  • Juice of 2 limes
  • Handful of fresh cilantro, chopped
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

To prepare this flavorful gazpacho, you will need the following kitchen tools:

  • blender
  • knife
  • cutting board
  • large bowl
  • spoon

Start by combining the watermelon, cucumber, red onion, bell pepper, tomatoes, and garlic in a blender. Blend until smooth, then transfer the mixture to a large bowl. Stir in the lime juice, olive oil, and chopped cilantro. Season with salt and pepper to taste.

Cover the bowl with plastic wrap and refrigerate the gazpacho for at least 2 hours to let the flavors meld together. When ready to serve, give the gazpacho a good stir and adjust the seasoning if needed.

The total weight of the cooked dish is approximately 2000g, making about 6 servings. Each serving weighs around 333g. One serving of this watermelon gazpacho is approximately 150 calories.

One clever tip for this recipe is to add a sprinkle of chili powder or a splash of hot sauce for a spicy kick. This unexpected touch will elevate the flavors and give your gazpacho a unique twist.

I hope you enjoy making and tasting this refreshing watermelon gazpacho! Feel free to customize it with your favorite herbs or additional vegetables. Let me know how it turns out for you!
