  • 400ml of coconut milk
  • 250g of chickpeas
  • 1 tablespoon of miso paste
  • 2 sheets of seaweed
  • 1 stalk of lemongrass
  • 2 tablespoons of soy sauce
  • 150g of rice noodles
  • 200g of mixed mushrooms
  • 1 lime

To start, heat the coconut milk in a saucepan over medium heat. Add in the miso paste, soy sauce, and chopped lemongrass. Stir well to combine the flavors. Break the seaweed sheets into smaller pieces and add them to the saucepan for a subtle sea flavor.
