Savor the Exotic Mango Curry: A Tropical Twist on Indian Cuisine

The Exotic Mango Curry

Today, I am excited to share with you a unique and exotic recipe that combines the sweetness of mangoes with the rich flavors of traditional Indian curry spices. This dish is perfect for a summer evening when you want to try something different that will transport your taste buds to a tropical paradise.

Ingredients:

  • 2 large ripe mangoes (approximately 500g)
  • 1 can of coconut milk (400ml)
  • 2 chicken breasts (400g)
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp of curry powder
  • 1 tsp of cumin
  • 1 tsp of ground coriander
  • 1/2 tsp of turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Kitchen Tools:

To start, heat some oil in a large skillet over medium heat. Add the sliced onions and cook until they are translucent. Then, add the minced garlic, grated ginger, curry powder, cumin, ground coriander, turmeric, salt, and pepper. Cook the spices for a minute until fragrant.

Next, add the diced chicken breast to the skillet and cook until the chicken is no longer pink. Pour in the coconut milk and let the curry simmer for about 10 minutes until the chicken is cooked through and the sauce has thickened slightly.

Finally, add the diced mangoes to the skillet and let them heat through for a few minutes. Taste and adjust the seasoning if needed. Serve the exotic mango curry hot, garnished with fresh cilantro.

The total weight of the cooked dish is approximately 1200g, making about 4 servings. Each serving weighs around 300g, with an approximate calorie count of 350 per serving.

One clever tip for this recipe is to add a splash of lime juice before serving to brighten up the flavors and add a refreshing zing to the dish.
