Curried Plantain Empanadas

Hello, foodies! Today, I’m excited to share a unique and flavorful appetizer recipe with you all. I was feeling adventurous in the kitchen and decided to create these Curried Plantain Empanadas. They are a fusion of Caribbean and Indian flavors that will surely impress your taste buds.

To make these delicious empanadas, you will need the following ingredients:

  • 2 ripe plantains (peeled and mashed)
  • 1 tbsp yellow curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 jalapeno (seeded and minced)
  • 2 tbsp chopped cilantro
  • Salt and pepper to taste
  • Empanada dough
  • Vegetable oil for frying

Before you start cooking, make sure you have the following kitchen tools on hand:

  • mixing bowl
  • skillet
  • wooden spoon
  • rolling pin
  • cookie cutter
  • frying pan

Start by heating some oil in a skillet over medium heat. Add the onion, garlic, and jalapeno, and sauté until the onions are translucent. Then, add the mashed plantains, curry powder, cumin, coriander, salt, and pepper. Cook for a few minutes until the flavors are well combined. Stir in the chopped cilantro and remove the mixture from heat.

Roll out the empanada dough and cut out circles using a cookie cutter. Place a spoonful of the plantain filling in the center of each circle, then fold the dough over and seal the edges with a fork.

In a frying pan, heat some vegetable oil over medium-high heat. Fry the empanadas in batches until they are golden brown on both sides. Remove from the oil and let them drain on a paper towel.

The total weight of the cooked Curried Plantain Empanadas is approximately 800 grams. This recipe makes around 10 empanadas, with each serving weighing about 80 grams. Each serving is estimated to have around 150 calories.

One clever tip for this recipe is to serve the empanadas with a side of mango chutney for an extra burst of sweetness that complements the savory curry flavors perfectly.
