I’m excited to share this delicious recipe for wild mushroom risotto with caramelized onions. It’s the perfect dish for a cozy night in or a special gathering with friends. The earthy flavors of the mushrooms combined with the sweet caramelized onions create a mouthwatering blend of tastes and textures that will leave you wanting more.

Ingredients:

  • Arborio rice (300g)
  • Wild mushrooms (200g)
  • Onions (2, thinly sliced)
  • Vegetable broth (1 liter)
  • White wine (1 cup)
  • Parmesan cheese (100g, grated)
  • Butter (50g)
  • Olive oil
  • Salt
  • Pepper
  • Fresh parsley for garnish

Kitchen Tools:

To start, heat some olive oil in a large skillet over medium heat. Add the sliced onions and cook them slowly until they are golden brown and caramelized, about 20-30 minutes. Remove the onions from the skillet and set them aside.

In a medium saucepan, bring the vegetable broth to a simmer. In the same skillet used for the onions, melt butter and add the Arborio rice. Stir the rice for a few minutes until it becomes slightly translucent. Pour in the white wine and stir until it is absorbed.

Begin adding the warm vegetable broth, a ladleful at a time, stirring constantly until the liquid is absorbed before adding more. This process will take about 18-20 minutes. In the last few minutes of cooking, add the wild mushrooms and caramelized onions to the risotto and cook until the mushrooms are tender.

Remove the skillet from the heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste. Serve the risotto hot, garnished with freshly chopped parsley.
