– 1 small onion, chopped
– 2 cloves of garlic, minced
– 1 cup Arborio rice
– 2 cups chicken broth
– 1 tsp smoked paprika
– 1 tsp saffron threads
– 1 cup frozen peas
– 500g seafood mix (shrimp, mussels, squid)
– Salt and pepper to taste
– Lemon wedges for serving

Start by heating a paella pan over medium heat and sautéing the chorizo until browned. Add the bell peppers, onion, and garlic, cooking until softened. Stir in the Arborio rice, smoked paprika, and saffron threads, allowing the rice to toast for a minute.

Pour in the chicken broth and bring to a simmer. Cook until the rice is almost tender, then add the frozen peas and seafood mix. Cover and let cook until the seafood is cooked through and the rice is tender. Season with salt and pepper to taste.

Once ready, remove from heat and let the paella rest for a few minutes. Serve with lemon wedges for a bright, citrusy finish.

This artistic paella weighs approximately 1800g in total and serves 6 people. Each serving is around 300g and contains approximately 450 calories.

One unique tip for this recipe is to sprinkle some finely chopped parsley over the paella before serving to add a pop of color and freshness.
