To begin, gather the following ingredients:

  • 1 head cauliflower (800g)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 2 cloves garlic
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 tsp red pepper flakes

You will also need the following kitchen tools:

  • baking sheet
  • chef’s knife
  • blender
  • mixing bowl

Start by preheating your oven to 400°F (200°C). Cut the cauliflower into 1-inch thick slices to create the “steaks.” Place the cauliflower steaks on a baking sheet and drizzle with olive oil. Season with salt and pepper, then roast in the oven for 25-30 minutes, or until golden brown and tender.

While the cauliflower is roasting, prepare the chimichurri sauce. In a blender, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, and red pepper flakes. Blend until smooth, then season with salt to taste.
