Ingredients:

  • 4 large bell peppers
  • 150g quinoa
  • 200g cherry tomatoes
  • 100g kalamata olives
  • 150g feta cheese
  • a handful of fresh basil leaves
  • 1 lemon, juiced and zested
  • 3 tablespoons of olive oil
  • to taste
  • to taste

To start, preheat your oven to 180°C. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish.

Cook the quinoa according to package instructions. In a mixing bowl, combine the cooked quinoa, halved cherry tomatoes, chopped kalamata olives, crumbled feta cheese, torn basil leaves, lemon juice, lemon zest, olive oil, salt, and pepper.

Stuff the bell peppers with the quinoa mixture and put the tops back on. Drizzle a bit of olive oil over the peppers and sprinkle with some extra feta cheese.

Bake in the oven for about 25-30 minutes, or until the peppers are tender and slightly charred on top.

Once done, remove from the oven and let them cool for a few minutes before serving.
