For this recipe, you’ll need the following ingredients:

  • butternut squash (500g)
  • quinoa (200g)
  • dried cranberries (50g)
  • pistachios (50g)
  • maple syrup (50ml)
  • cinnamon (1 tsp)
  • salt (to taste)
  • black pepper (to taste)

To make this dish, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • baking sheet
  • saucepan
  • wooden spoon

Start by preheating your oven to 200°C. Peel and dice the butternut squash into small cubes, then spread them out on a baking sheet. Drizzle with olive oil, sprinkle with cinnamon, salt, and pepper, and roast in the oven for 25-30 minutes until tender.

While the squash is roasting, rinse the quinoa under cold water. In a saucepan, combine the quinoa with double the amount of water and a pinch of salt. Bring to a boil, then reduce the heat and simmer for 15 minutes until the quinoa is cooked through.

Once the quinoa and squash are ready, mix them together in a large bowl. Add in the dried cranberries, chopped pistachios, and maple syrup. Stir well to combine all the flavors.

Serve your autumn quinoa salad warm, garnished with a sprinkle of additional pistachios for crunch. This dish is perfect for a cozy night in or as a side dish for a fall gathering.
