Savor the Flavors of Morocco with These Stuffed Bell Peppers

Moroccan Inspired Stuffed Bell Peppers

Today, I am excited to share with you my recipe for Moroccan inspired stuffed bell peppers. This dish is perfect for a cozy night in or a festive gathering with friends. The warm, aromatic spices combined with the sweet bell peppers create a mouthwatering flavor experience that will leave you wanting more.

Ingredients:

  • 4 large bell peppers
  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup dried apricots, chopped
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground coriander
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large pot
  • baking dish

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish, cut side up.

In a large pot, heat olive oil over medium heat. Add the quinoa and toast for a few minutes until fragrant. Stir in the chickpeas, dried apricots, ground cumin, ground cinnamon, and ground coriander. Season with salt and pepper.

Pour the vegetable broth into the pot and bring to a boil. Reduce heat, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and most of the broth has been absorbed.

Stuff the bell peppers with the quinoa mixture, pressing down gently to pack it in. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender.

Once done, remove the foil and bake for an additional 5-10 minutes to lightly brown the tops. Serve the stuffed bell peppers warm and enjoy the delicious flavors of Morocco.

The approximate total weight of the cooked dish is 1000 grams, with 4 servings at 250 grams each. Each serving is approximately 300 calories.

One unique tip for this dish is to sprinkle some crushed pistachios on top before serving for an extra crunch and nutty flavor.
