  • 1 cup all-purpose flour (120g)
  • 1 egg
  • 1/2 tsp salt
  • 1/2 cup butter (113g)
  • 10 fresh sage leaves
  • 1/4 cup grated parmesan cheese

Start by roasting the sweet potatoes on a baking sheet in a 400°F (200°C) oven until tender, about 45 minutes. Let them cool slightly, then scoop out the flesh and mash it with a potato masher. Add the flour, egg, and salt to the sweet potato mash, and mix until a dough forms.

On a floured surface, roll the dough into long ropes, then cut them into bite-sized pieces. Use a fork to create ridges on each gnocchi. In a large pot of salted boiling water, cook the gnocchi until they float to the surface, then remove them with a slotted spoon and set aside.
