Today, I am excited to share with you my recipe for Miso Glazed Pumpkin with Pomegranate. This dish combines the natural sweetness of roasted pumpkin with the umami richness of miso, all balanced out by the bright burst of pomegranate arils. It’s a truly unique and unexpected combination that will delight your taste buds.

To create this dish, you will need the following ingredients:

  • 1 small pumpkin, peeled and diced (about 500g)
  • 3 tablespoons of white miso paste
  • 1 fresh pomegranate, arils removed
  • 2 tablespoons of olive oil
  • 1 tablespoon of maple syrup
  • Salt and pepper to taste
