Fall Comfort Food: Roasted Butternut Squash and Sage Risotto

Today, I am excited to share with you a cozy and delicious recipe perfect for the fall season. This Roasted Butternut Squash and Sage Risotto is the ultimate comfort food that will warm you up on a crisp autumn day.

Ingredients:

  • 1 medium butternut squash, diced (about 500g)
  • 1 cup arborio rice (about 200g)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup fresh sage leaves, chopped
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Start by preheating your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 25-30 minutes until the squash is tender and slightly caramelized.

In a large skillet, heat the remaining olive oil over medium heat. Add the chopped onion and cook until translucent, then add the minced garlic and cook for another minute. Stir in the arborio rice and cook for 2-3 minutes until the rice is slightly toasted.

Gradually add the vegetable broth, one ladle at a time, stirring constantly and allowing the liquid to absorb before adding more. Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.

Fold in the roasted butternut squash, chopped sage leaves, grated parmesan cheese, and butter. Season with salt and pepper to taste. Cook for an additional 2-3 minutes until everything is well combined and heated through.

Serve the risotto hot, garnished with additional chopped sage leaves and parmesan cheese.
