Today’s Unique Recipe: Spiced Pumpkin-Sage Risotto

Greetings, foodies! Today I am excited to share with you a cozy and comforting recipe that is perfect for the fall season. As the weather turns cooler, I find myself craving warm and creamy dishes, and nothing says comfort quite like a delicious bowl of risotto. This Spiced Pumpkin-Sage Risotto is a unique twist on the classic Italian dish, featuring the earthy flavors of pumpkin and the aromatic touch of sage.

To make this flavorful dish, you will need the following ingredients:

  • 200g Arborio rice
  • 150g pumpkin puree
  • 750ml vegetable broth
  • 100ml white wine
  • 1 small onion, finely chopped
  • 10 fresh sage leaves, chopped
  • 50g Parmesan cheese, grated
  • 50g butter
  • 1/2 tsp nutmeg
  • To taste

For this recipe, you will need the following kitchen tools:

  • large saucepan
  • wooden spoon
  • grater

In a large saucepan, heat some olive oil over medium heat. Add the chopped onion and cook until translucent. Stir in the Arborio rice and cook for a few minutes until the rice is lightly toasted. Deglaze the pan with white wine and allow the alcohol to cook off.

Next, begin adding the vegetable broth to the rice mixture one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more. Continue this process until the rice is creamy and cooked to al dente, about 18-20 minutes.

Once the risotto is ready, stir in the pumpkin puree, chopped sage leaves, nutmeg, butter, and grated Parmesan cheese. Season with salt and pepper to taste. Cook for an additional 2-3 minutes to allow the flavors to meld together.

To serve, ladle the spiced pumpkin-sage risotto into bowls and garnish with a drizzle of olive oil, a sprinkle of grated Parmesan cheese, and a few fresh sage leaves.

This Spiced Pumpkin-Sage Risotto serves 4 people and each serving weighs approximately 300g. One serving contains approximately 350 calories.

A clever tip for this recipe is to roast the pumpkin before pureeing it for a deeper, caramelized flavor. This extra step adds a richness to the dish that is truly worth it.

I hope you enjoy making and savoring this unique and delicious Spiced Pumpkin-Sage Risotto. Feel free to experiment with different herbs and spices to make it your own. Happy cooking!
