Today, I’m excited to share my recipe for Heavenly Harvest Stuffed Bell Peppers, a dish that marries the earthy flavors of autumn vegetables with the hearty goodness of ancient grains.

To start, gather the following ingredients:

  • 4 medium bell peppers (assorted colors)
  • 1 cup quinoa, cooked
  • 1 small butternut squash, diced
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • Salt and pepper, to taste
  • Olive oil, for drizzling

You will also need the following kitchen tools:

  • mixing bowl
  • spatula

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Place the hollowed-out peppers on the baking sheet.

In a mixing bowl, combine the cooked quinoa, diced butternut squash, chickpeas, dried cranberries, chopped walnuts, minced garlic, cumin, cinnamon, salt, and pepper. Mix well to ensure all ingredients are evenly distributed. Stuff the bell peppers with the quinoa mixture, packing it in tightly.

Drizzle a bit of olive oil over the stuffed peppers to help them brown and become tender during baking. Cover the peppers with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the peppers are tender and slightly charred.
