This Nutty Sweet Potato Pilaf is a hearty and satisfying recipe that will warm you up from the inside out. It’s a unique twist on a classic favorite, combining the earthy sweetness of sweet potatoes with the nutty crunch of almonds and the subtle heat of paprika. Ingredients:

  • 2 medium sweet potatoes, diced
  • 1 cup quinoa, rinsed
  • 1/2 cup almonds, chopped
  • 1 small onion, diced
  • 1 tsp paprika
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

To start, heat olive oil in a large skillet over medium heat. Add diced onions and cook until translucent, about 5 minutes. Add diced sweet potatoes and quinoa to the skillet, stirring to combine. Cook for another 5 minutes until the quinoa starts to toast slightly.

Next, add vegetable broth, chopped almonds, paprika, salt, and pepper to the skillet. Bring the mixture to a simmer, then reduce the heat to low and cover. Let the pilaf cook for about 20 minutes, or until the quinoa is cooked through and the sweet potatoes are tender.

Once the pilaf is cooked, remove from heat and let it sit, covered, for another 5 minutes to allow the flavors to meld together. Give it a final stir to fluff up the quinoa and sweet potatoes before serving. Enjoy this nutty and aromatic dish on its own or as a delicious side!
