Today’s Recipe: Peach BBQ Pulled Pork Tacos

Hey there, foodies! Today I’m excited to share a recipe that’s perfect for celebrating the start of summer with a fun twist on classic BBQ flavors. These Peach BBQ Pulled Pork Tacos are a delicious and unique combination of sweet and savory that will have your taste buds dancing with delight. Let’s get started!

Ingredients:

  • 700g pork shoulder (boneless)
  • 3 fresh peaches
  • 1 onion
  • 3 garlic cloves
  • 2 chipotle peppers in adobo sauce
  • 50g brown sugar
  • 60ml apple cider vinegar
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 10 corn tortillas
  • for garnish

Kitchen Tools:

  • slow cooker
  • blender
  • knife
  • cutting board

To start, season the pork shoulder with salt, pepper, cumin, and cinnamon. Place it in the slow cooker. In a blender, combine the peaches (peeled and pitted), onion, garlic, chipotle peppers, brown sugar, and apple cider vinegar. Blend until smooth. Pour the mixture over the pork shoulder in the slow cooker.

Cook on low for 8 hours or until the pork is tender and easily shreds with a fork. Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix it with the peach BBQ sauce.

Warm the corn tortillas in a dry skillet until soft and pliable. Fill each tortilla with a generous portion of the peach BBQ pulled pork. Top with fresh cilantro for a burst of freshness.

This recipe makes approximately 10 servings, with each taco weighing around 150g. One serving of these Peach BBQ Pulled Pork Tacos is approximately 300 calories.

A unique tip for this recipe is to add a splash of bourbon to the peach BBQ sauce for an extra depth of flavor. The rich sweetness of the bourbon complements the peaches and pork beautifully.

I hope you enjoy making and devouring these Peach BBQ Pulled Pork Tacos as much as I do. Don’t be afraid to get creative and make this recipe your own by adding your favorite toppings or serving it with a side of slaw. Happy cooking!
