Savor the Season: Pumpkin, Chickpea, and Cranberry Roast

Today, I’m excited to share a unique and flavorful recipe that I recently created for a cozy autumn evening. This dish has a perfect blend of sweet, savory, and tangy flavors that will surely delight your taste buds.

Ingredients:

  • Pumpkin puree
  • Canned chickpeas, drained and rinsed
  • Dried cranberries
  • Red onion, diced
  • Apple, diced
  • Pecans, chopped
  • Maple syrup
  • Apple cider vinegar
  • Cinnamon
  • Ground nutmeg
  • <li data-ingredient="Salt and pepper to taste

Kitchen Tools:

  • Mixing bowl
  • Baking sheet
  • Knife
  • Cutting board
  • Oven

Preparation:

In a mixing bowl, combine the pumpkin puree, chickpeas, dried cranberries, diced red onion, diced apple, and chopped pecans. Mix well to evenly distribute all the ingredients. In a small bowl, whisk together the maple syrup, apple cider vinegar, cinnamon, nutmeg, salt, and pepper. Pour this mixture over the pumpkin mixture and toss until everything is well coated.

Spread the mixture onto a baking sheet and roast in a preheated oven at 375°F (190°C) for 25-30 minutes, or until the pumpkin is tender and slightly caramelized. Remove from the oven and let it cool for a few minutes before serving.

Clever Tip:

For an extra crunch, try adding a handful of crispy kale chips to the mixture before roasting. The kale will add a delightful texture and flavor to the dish.
