Autumn Harvest Butternut Squash Soup

Hi there, foodies! Today I’m excited to share with you my favorite autumn recipe: a hearty and delicious Butternut Squash Soup. This dish is perfect for those crisp fall days when you want something warm and comforting to fill your belly. The blend of seasonal vegetables and spices will surely bring a touch of warmth to your kitchen.

Ingredients:

  • 1 medium butternut squash (about 800g)
  • 2 large carrots (150g)
  • 1 medium onion (100g)
  • 3 garlic cloves
  • 4 cups vegetable broth
  • 2 sprigs of fresh thyme
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Kitchen Tools:

  • chef’s knife
  • cutting board
  • vegetable peeler
  • large pot
  • immersion blender

To begin, heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until fragrant. Add in the cubed butternut squash and carrots, stirring occasionally until slightly browned.

Pour in the vegetable broth and add the fresh thyme, ground cinnamon, nutmeg, salt, and pepper. Bring the mixture to a simmer and let it cook for about 15-20 minutes, or until the vegetables are tender.

Once the vegetables are cooked through, remove the thyme sprigs and use an immersion blender to blend the soup until smooth and creamy. If you prefer a chunkier soup, you can also use a potato masher to mash some of the vegetables while leaving others intact for texture.

Taste the soup and adjust the seasoning if needed. Serve hot, garnished with a drizzle of olive oil and a sprinkle of fresh thyme leaves. This Butternut Squash Soup is perfect on its own or paired with a crusty loaf of bread for dipping.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving is about 300g, and has an estimated calorie count of 150 calories.

Tip:

To add a bit of sweetness to this savory soup, try roasting the butternut squash before adding it to the pot. This will caramelize the sugars in the squash and enhance its flavor profile.

I hope you enjoy making and savoring this Autumn Harvest Butternut Squash Soup as much as I do. Feel free to get creative with the ingredients and adjust the seasonings to suit your taste. Happy cooking!
