Autumn Harvest Quinoa Salad

As the crisp autumn air settles in, I find myself craving hearty and flavorful dishes that celebrate the seasonal produce. Today, I’m excited to share my recipe for a unique Autumn Harvest Quinoa Salad that combines a variety of unexpected ingredients for a truly unforgettable taste experience.

For this recipe, you will need the following ingredients:

  • quinoa (200g)
  • butternut squash, diced (300g)
  • apples, diced (200g)
  • dried cranberries (100g)
  • walnuts, chopped (150g)
  • feta cheese, crumbled (150g)
  • fresh parsley, chopped (50g)
  • olive oil (50ml)
  • balsamic vinegar (30ml)
  • honey (30ml)
  • salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • saucepan
  • baking sheet
  • chef’s knife
  • cutting board
  • mixing bowl
  • whisk

Start by cooking the quinoa according to the package instructions in a saucepan. While the quinoa is cooking, preheat your oven to 400°F (200°C) and spread the diced butternut squash on a baking sheet. Drizzle with olive oil, season with salt and pepper, and roast in the oven for 20-25 minutes until tender.

In a mixing bowl, combine the cooked quinoa, roasted butternut squash, diced apples, dried cranberries, chopped walnuts, crumbled feta cheese, and fresh parsley. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing. Pour the dressing over the quinoa salad and toss gently to combine.

Serve the Autumn Harvest Quinoa Salad warm or at room temperature, allowing the flavors to meld together. This dish is perfect for a cozy fall dinner or a festive holiday gathering.

The total weight of the cooked dish is approximately 1100g, with 6 servings at around 183g per serving. Each serving of this Autumn Harvest Quinoa Salad is estimated to be around 300 calories.

A clever tip for this recipe is to sprinkle some cinnamon over the roasted butternut squash before baking to add a warm and cozy flavor to the dish.

I encourage you to give this Autumn Harvest Quinoa Salad a try and feel free to customize it with your favorite seasonal ingredients. Enjoy the flavors of fall in every bite!
