As the crisp air of autumn starts to settle in, I find myself craving hearty and comforting dishes that celebrate the season’s bounty. That’s why today, I’m excited to share with you my recipe for Autumn Harvest Stuffed Peppers. This dish combines the warmth of classic stuffed peppers with a fusion of seasonal ingredients that will surely delight your taste buds.

For this recipe, you will need the following ingredients:

  • 4 large bell peppers
  • 200g ground turkey
  • 1 cup quinoa
  • 1 small butternut squash, diced
  • 1 apple, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tsp cinnamon
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • knife
  • cutting board
  • medium saucepan
  • baking dish

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers, remove the seeds and membranes, and set the peppers aside. In a medium saucepan, cook the quinoa according to the package instructions. In a separate pan, cook the ground turkey until browned, then set aside.

In a large bowl, combine the cooked quinoa, diced butternut squash, chopped apple, dried cranberries, chopped pecans, cinnamon, cooked ground turkey, salt, and pepper. Mix everything together until well combined.

Stuff the bell peppers with the quinoa mixture, pressing down gently to pack the filling in. Place the stuffed peppers in a baking dish and cover with foil. Bake in the preheated oven for 30 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender.

Once the peppers are cooked through, remove them from the oven and let them cool slightly before serving. Each stuffed pepper weighs approximately 300g, and this recipe serves 4 with each serving weighing around 300g. Each serving is estimated to be around 350 calories.

One clever tip for this recipe is to sprinkle a little extra cinnamon on top of the stuffed peppers before baking for a warm and fragrant finish that will enhance the flavors of the dish.
