  • Salt and pepper, to taste
  • 2 tablespoons olive oil

To make this Roasted Butternut Squash Pasta, you’ll need the following kitchen tools:

  • large pot
  • blender
  • knife
  • wooden spoon

Start by preheating your oven to 200°C. Place the butternut squash cubes on a baking sheet, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for about 30 minutes until they are tender and slightly caramelized.

In the meantime, cook the pasta according to the package instructions in a large pot of salted boiling water. Drain and set aside.

In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until they are soft and fragrant. Add the roasted butternut squash cubes, vegetable broth, coconut milk, nutmeg, salt, and pepper. Stir everything together and let it simmer for about 10 minutes.

Using a blender, carefully blend the mixture until smooth and creamy. Taste and adjust the seasoning if needed.

Add the cooked pasta to the pot with the butternut squash sauce, and toss everything together until the pasta is well coated. Serve hot, garnished with a sprinkle of nutmeg or fresh herbs if desired.
