  • butternut squash (500g, diced)
  • cranberries (100g)
  • quinoa (200g)
  • pistachios (50g, chopped)
  • maple syrup (50ml)
  • cinnamon (1 tsp)
  • nutmeg (1/2 tsp)
  • vegetable broth (500ml)
  • salt (to taste)
  • pepper (to taste)

  • cutting board
  • baking sheet
  • large pot
  • wooden spoon

To start, preheat your oven to 400°F (200°C). Place the diced butternut squash and cranberries on a baking sheet. Drizzle with maple syrup and sprinkle with cinnamon and nutmeg. Roast in the oven for 25-30 minutes until the squash is tender.

In a large pot, cook the quinoa according to package instructions using vegetable broth instead of water for added flavor. Once the quinoa is cooked, stir in the roasted butternut squash and cranberries. Season with salt and pepper to taste.

Lastly, top the dish with chopped pistachios for a crunchy texture and extra flavor. Serve warm and enjoy the ultimate fall comfort dish!
