Today, I’m excited to share a hearty and comforting harvest vegetable stew recipe perfect for cozy autumn evenings. This dish always reminds me of family gatherings and crisp fall days, making it the ideal meal to warm both body and soul.

Ingredients:

  • butternut squash (300g, peeled and diced)
  • sweet potatoes (250g, peeled and cubed)
  • brussels sprouts (150g, halved)
  • carrots (150g, sliced)
  • onion (1, diced)
  • garlic (3 cloves, minced)
  • vegetable broth (1 liter)
  • tomato paste (2 tbsp)
  • bay leaves (2)
  • fresh thyme (1 tbsp, chopped)
  • salt and pepper to taste

  • large pot
  • wooden spoon
  • ladle

Start by heating a large pot over medium heat and adding a splash of olive oil. Sauté the diced onion and minced garlic until fragrant, then add the diced butternut squash, sweet potatoes, sliced carrots, and halved brussels sprouts. Cook the vegetables for a few minutes until they start to soften.

Next, pour in the vegetable broth and stir in the tomato paste. Add the bay leaves and chopped fresh thyme, then season with salt and pepper to taste. Bring the stew to a simmer, reduce the heat, and let it simmer gently for about 30-40 minutes, or until all the vegetables are tender.

Once the vegetables are cooked through and flavorful, remove the bay leaves and adjust the seasoning if needed. Ladle the harvest vegetable stew into bowls and serve hot. This stew is perfect on its own or paired with some crusty bread for a complete meal.
