Today, I’m excited to share a unique dish that combines flavors from around the world in one delicious meal. This recipe was inspired by a recent trip I took to Thailand, where I fell in love with the vibrant street food scene. I wanted to recreate those bold flavors at home, and this dish is the result!

For this recipe, you will need the following ingredients:

  • 400g boneless chicken thighs, diced
  • 200ml coconut milk
  • 2 stalks lemongrass, crushed
  • 50g red curry paste
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 4 kaffir lime leaves
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 300g cooked basmati rice

To prepare this dish, you will need the following kitchen tools:

  • wok
  • wooden spoon
  • chef’s knife
  • cutting board

Start by heating a wok over medium heat and adding the coconut milk. Once it starts to simmer, stir in the red curry paste and lemongrass. Allow the flavors to meld together for a few minutes before adding the diced chicken thighs. Cook until the chicken is browned on all sides.

Next, add the pineapple chunks, sliced bell pepper, and kaffir lime leaves to the wok. Stir in the fish sauce and brown sugar, adjusting the seasoning to taste. Let the mixture simmer until the chicken is cooked through and the flavors have blended beautifully.

Serve the curry over a bed of cooked basmati rice, garnishing with a sprinkle of fresh cilantro and a squeeze of lime juice for an extra burst of flavor.

The total weight of the cooked dish is approximately 1200g, with 4 servings. Each serving weighs around 300g, with an estimated calorie count of 400 per serving.

One unique tip for this dish is to add a splash of coconut vinegar before serving for an extra tangy kick that will elevate the flavors even more.
