Refreshing Watermelon Gazpacho

Today, I’m sharing a recipe for a unique and refreshing summer dish that will cool you down on even the hottest days. This Watermelon Gazpacho is a twist on the classic Spanish soup, perfect for a light lunch or as a starter for a summer dinner party.

Ingredients:

  • 1 small watermelon, peeled and diced (about 800g)
  • 1 cucumber, peeled and diced (about 200g)
  • 1/2 red onion, diced (about 50g)
  • 1 red bell pepper, diced (about 150g)
  • 1 large tomato, diced (about 200g)
  • 2 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Kitchen Tools:

  • large bowl

Start by combining the diced watermelon, cucumber, red onion, red bell pepper, tomato, and garlic in a large bowl. Add the olive oil, red wine vinegar, salt, and pepper. Toss everything together until well mixed. Let the mixture sit for about 30 minutes to allow the flavors to meld together.

Next, working in batches, transfer the mixture to a blender and blend until smooth. You may need to add a bit of water to reach your desired consistency. Once blended, taste and adjust the seasoning with more salt and pepper if needed.

Refrigerate the gazpacho for at least 1 hour before serving to allow it to chill and the flavors to fully develop. When ready to serve, ladle the gazpacho into bowls and garnish with fresh basil leaves.

This Watermelon Gazpacho recipe makes approximately 4 servings, with each serving weighing around 400g. One serving of this refreshing summer soup is about 150 calories.

For a unique twist on this gazpacho, try adding a sprinkle of crumbled feta cheese on top before serving. The salty tang of the cheese pairs perfectly with the sweet watermelon and tangy vinegar.
