Ingredients:

  • arborio rice (300g)
  • peaches, peeled and diced (2 large)
  • fresh basil, chopped (1 cup)
  • shallots, minced (2)
  • garlic, minced (2 cloves)
  • vegetable broth (1 liter)
  • white wine (1 cup)
  • butter (50g)
  • parmesan cheese, grated (50g)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • grater
  • knife

To start, heat the vegetable broth in a saucepan until it simmers. In another large saucepan, melt the butter over medium heat. Add the minced shallots and garlic, and sauté until fragrant. Next, add the arborio rice to the pan and toast it for a few minutes until translucent.

Pour in the white wine and stir until it is absorbed. Begin adding the hot vegetable broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more. This process should take about 18-20 minutes.

When the rice is al dente, gently fold in the diced peaches and chopped basil. Stir in the grated parmesan cheese until melted and season with salt and pepper to taste.
