Hey there, fellow foodies! Today, I’m excited to share a unique recipe that combines the sweetness of peaches with the savory richness of pork in a delightful pasta dish. This recipe is perfect for those warm summer evenings when you want something a little different but still comforting. Let’s get cooking!

Ingredients:

  • 250g pork shoulder, cubed
  • 2 fresh peaches, diced
  • 200g pasta of your choice
  • Handful of fresh basil leaves
  • 2 garlic cloves, minced
  • 50ml balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

I start by cooking the pork shoulder in a skillet over medium heat until browned and cooked through, about 8-10 minutes. Then, I remove the pork from the skillet and set it aside. In the same skillet, I add the diced peaches and garlic, cooking until the peaches are soft and caramelized, about 5 minutes.

While the peaches are cooking, I boil the pasta according to the package instructions until al dente. Once the pasta is cooked, I drain it and set it aside.

Next, I add the balsamic vinegar to the skillet with the peaches and garlic, scraping up any browned bits from the bottom of the pan. I return the cooked pork to the skillet and toss everything together, allowing the flavors to meld for a few minutes.

I then add the cooked pasta to the skillet, along with the fresh basil leaves and olive oil. I toss everything together until the pasta is well coated in the flavorful sauce.

To serve, I divide the peachy pork pasta among plates, making sure to top each portion with an extra drizzle of balsamic vinegar and a sprinkle of freshly cracked black pepper.

This dish weighs approximately 1200g once cooked, serving 4 people with each serving weighing around 300g. Each serving is estimated to be around 450 calories.

One unique tip for this recipe is to add a pinch of red pepper flakes to the skillet with the peaches and garlic for a little extra kick of heat.
