Today’s Unique Creation: Spicy Mango Chicken Curry

As the weather starts to cool down, I find myself craving dishes that are both comforting and flavorful. Today, I’m excited to share my recipe for Spicy Mango Chicken Curry, a dish that combines the sweetness of ripe mangoes with the heat of aromatic spices. This unique creation is perfect for a cozy night in or a gathering with friends and family.

Ingredients:

  • 500g boneless, skinless chicken thighs
  • 2 ripe mangoes
  • 400ml coconut milk
  • 1 large onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp curry powder
  • 1 tsp chili flakes
  • Handful of fresh coriander, chopped
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp cooking oil

Kitchen Tools:

To start, heat the cooking oil in a large skillet over medium heat. Add the diced onion, minced garlic, and grated ginger, and sauté until the onions are translucent and fragrant. Next, add the curry powder and chili flakes, stirring to coat the aromatics in the spices.

Cut the chicken thighs into bite-sized pieces and add them to the skillet. Cook until the chicken is no longer pink on the outside. Then, pour in the coconut milk and stir well to combine. Let the curry simmer for about 10 minutes, allowing the flavors to meld together.

While the curry is simmering, peel and chop the ripe mangoes into chunks. Add the mango chunks to the skillet, stirring gently to incorporate them into the curry. Season with salt and pepper to taste.

Once the chicken is cooked through and the mangoes are soft but still hold their shape, sprinkle fresh coriander over the curry. Serve the Spicy Mango Chicken Curry hot over steamed rice or with warm naan bread.
