  • boneless, skinless chicken breast (250g)
  • spaghetti pasta (200g)
  • pineapple chunks (150g)
  • red bell pepper (1)
  • jalapeño pepper (1)
  • garlic cloves (3)
  • coconut milk (200ml)
  • chicken broth (100ml)
  • curry powder (1 tbsp)
  • salt (to taste)
  • black pepper (to taste)
  • olive oil (2 tbsp)

To begin, start by cooking the spaghetti pasta according to the package instructions. Drain and set aside. In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until no longer pink. Remove chicken from the skillet and set aside.

In the same skillet, add minced garlic, diced red bell pepper, and sliced jalapeño pepper. Sauté until the vegetables are tender. Then, add pineapple chunks, curry powder, salt, and black pepper. Cook for a few minutes until the pineapple is caramelized.

Pour in coconut milk and chicken broth, stirring well to combine. Bring the mixture to a simmer. Add the cooked chicken back to the skillet and let everything simmer together for a few more minutes to allow the flavors to meld.
