– 2 acorn squash (approximately 800g each)
– 1 cup cooked quinoa
– 1/2 cup dried cranberries
– 1/2 cup chopped pecans
– 1/4 cup maple syrup
– 1 teaspoon cinnamon
– Salt and pepper to taste

Begin by slicing the acorn squash in half vertically and scooping out the seeds. Place the squash halves cut-side down on a baking sheet and roast in the oven for 30 minutes, or until tender.
