Moroccan-inspired Lamb and Chickpea Stew

Today, I’m excited to share a recipe that’s perfect for cozy evenings at home. This Moroccan-inspired lamb and chickpea stew is a flavorful and warming dish that will transport you to the bustling markets of Marrakech with every bite.

Ingredients

  • 500g lamb shoulder, diced
  • 400g chickpeas, cooked
  • 1 medium eggplant, cubed
  • 1 red bell pepper, chopped
  • 1 large onion, diced
  • 2 tomatoes, chopped
  • 3 garlic cloves, minced
  • 500ml vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 2 tbsp olive oil
  • to taste

To start, heat olive oil in a large pot over medium heat. Add the diced lamb shoulder and brown it on all sides. Once browned, remove the lamb from the pot and set it aside.

In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant. Add the cubed eggplant, chopped bell pepper, and chopped tomatoes. Cook for a few minutes until the vegetables start to soften.

Return the browned lamb to the pot and pour in the vegetable broth. Add the cooked chickpeas, cumin, paprika, coriander, and cinnamon. Season with salt and pepper to taste. Stir everything together and bring the stew to a simmer.

Cover the pot with a lid and let the stew simmer for about 1.5 to 2 hours, stirring occasionally, until the lamb is tender and the flavors have melded together beautifully.

Once the stew is ready, serve it hot in bowls and garnish with fresh cilantro leaves. This hearty and aromatic lamb and chickpea stew is best enjoyed with a side of couscous or crusty bread to soak up the flavorful broth.

This stew serves 4, with each serving weighing approximately 400g. Each serving is estimated to be around 450 calories.
