Thai-Inspired Pineapple Coconut Curry

Today, I’m excited to share a unique and flavorful dish inspired by my recent trip to Thailand. This Thai-inspired pineapple coconut curry blends the sweetness of pineapple with the creaminess of coconut milk and a hint of spicy curry for the perfect balance of flavors.

Ingredients:

  • 500g pineapple chunks (fresh or canned)
  • 400ml coconut milk
  • 300g chicken breast (diced)
  • 50g red curry paste
  • 30ml fish sauce
  • 20g brown sugar
  • 4 kaffir lime leaves
  • 2 tbsp vegetable oil
  • Handful of fresh basil leaves
  • Cooked jasmine rice, for serving

Kitchen Tools:

  • wooden spoon
  • measuring cups and spoons

To start, heat the vegetable oil in a wok over medium heat. Add the red curry paste and cook for 1-2 minutes until fragrant. Then, add the diced chicken breast and cook until browned on all sides.

Next, pour in the coconut milk and fish sauce, stirring to combine. Add the pineapple chunks, kaffir lime leaves, and brown sugar to the wok. Let the curry simmer for 15-20 minutes until the chicken is cooked through and the flavors have melded together.

Just before serving, tear the fresh basil leaves and sprinkle them over the curry for a burst of freshness. Serve the Thai-inspired pineapple coconut curry over cooked jasmine rice for a complete and satisfying meal.

This dish weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g with an estimated calorie count of 400 per portion.

One unique tip for this recipe is to char the pineapple chunks in a hot pan before adding them to the curry. This will add a smoky depth of flavor to the dish that contrasts beautifully with the sweetness of the pineapple and creaminess of the coconut milk.
