Ingredients:

  • 400g shrimp, peeled and deveined
  • 1 can (400ml) coconut milk
  • 2 tbsp curry powder
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • Assorted vegetables (bell peppers, snap peas, carrots), sliced
  • 1 lime, juiced
  • Fresh cilantro, chopped
  • Cooked rice for serving

To start, heat some oil in a wok over medium heat. Add the minced garlic and grated ginger, stirring until fragrant. Next, toss in the sliced vegetables and cook until slightly tender. Push the vegetables to the side of the wok and add the shrimp. Cook until they turn pink and opaque.

Once the shrimp is cooked, pour in the coconut milk and sprinkle in the curry powder. Stir everything together and let the curry simmer for a few minutes until it thickens slightly. Squeeze in the lime juice for a pop of freshness before sprinkling in the chopped cilantro.
