Today, I want to share a recipe that always brings me back to my childhood summers spent in the countryside. The warm, sunny days and vibrant colors of the outdoors inspired me to create a dish that bursts with fresh, unexpected flavors. This dish is perfect for a lazy weekend brunch or a cozy family dinner, bringing a touch of nostalgia and creativity to your table.

Ingredients:

  • purple potatoes (300g)
  • kiwano melon (1)
  • saffron threads (0.5g)
  • scallops (200g)
  • pistachios (50g)
  • lemon balm leaves (10g)
  • coconut milk (200ml)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • grater
  • saucepan
  • blender

To start, boil the purple potatoes until tender. While they cook, scoop out the seeds of the kiwano melon and grate the zest of one lemon. In a saucepan, simmer the saffron threads in coconut milk until fragrant, then strain to remove the threads. Blend the saffron-infused coconut milk with the lemon zest to create a vibrant sauce.

Next, sear the scallops in a hot pan until golden brown on both sides. Crush the pistachios and pick the lemon balm leaves. Once the potatoes are cooked, slice them into rounds and arrange on a plate. Top with the seared scallops, kiwano seeds, crushed pistachios, and lemon balm leaves. Drizzle the saffron coconut sauce over the dish, allowing the flavors to mingle.

This unique creation weighs approximately 700g after cooking and serves four people. Each serving is around 175g, with an estimated calorie count of 300 per portion.

One clever tip for this dish is to sprinkle a pinch of sea salt over the scallops just before serving. The hint of salt enhances the natural sweetness of the scallops and balances out the exotic flavors of the saffron and kiwano melon.
